Shaohui Zhang, Ph.D, Researcher of department of Food Science and Engineering, School of Agriculture and Biology in Shanghai Jiao Tong University, Associate Director of Bor Luh Food Safety Center. Dr Zhang graduated from KagoshimaUniversity in Japan and was granted a doctor degree of agriculture science in 1998. After graduation, Dr. Zhang was employed to act as researcher in the institute of Tanishow Food Design in Japan from 1998 to 2000. In 2001. From July 2000 to Jurn 2007, Dr. Zhang was employed in Shanghai Bright Dairy Co., and experienced manager of research and design, chief supervisor of production technology and chief engineer. Dr. Zhang joined School of agriculture and biology of ShanghaiJiaoTongUniversity and created the research laboratory of Dairy science in 2007.
Dr. Zhang's major research field is as follow:
1. R & D of novel technologies for dairy production and processing and new product development, with a focus on R&D of new products and production technologies for producing cheese and technologies for producing novel yogurt.
2. Dariy production and consumer safety system, focus on the construction of HACCP system and application of new CIP technologies with advantage of safety, highly efficient, energy-saving and water-saving.
3. Isolation and purification of functional bioactivity peptides and its application in dairy industry.
4. Food safety managment and training.
